How to store rice

Uncooked rice ice should be stored dry, in order to prevent bacteria from developing.  It should be cooled and covered after cooking, and kept in the fridge below 5 degrees centigrade for a maximum of 24 hours.  It must be reheated thoroughly to ward off bacteria. 

Many people believe that eating old rice can cause illness.  However, the danger lies in leaving rice at room temperature for too long, as this allows bacteria to multiply.  Left alone, bacteria will produce toxins that cannot be killed off by reheating.  These toxins can cause diarrhoea and vomiting.  Keeping rice in the fridge and reheating it to the point of steaming should remove any risk.  For more information about eating rice safely, see the Food Standards Agency guide to rice and grains.
